Kids Falafels
Ingredients
- 1/2 can chickpeas
- 1 bouquet coriander and/or parsley
- 2 peeled garlic cloves
- Cumin
- Olive oil
- Salt and pepper
- 4 tablespoons flour
- 4 tablespoons breadcrumbs
- 1.5 tablespoons DH Veggie Broth powder
- Double Happiness Veggie Broth Powder
Method
- Start blending the herbs (only the leaves).
- Add the garlic and keep on blending.
- Add the chickpeas and 2 tablespoons olive oil. Blend for 2-3 minutes.
- Transfer into a bowl. Season with salt, pepper, 1/2 teaspoon cumin and 1.5 tablespoon DH Veggie Broth Powder.
- Add flour and breadcrumbs. Dough should have the right texture to be rolled. If not add a bit more breadcrumbs.
- Roll into golf size balls.
- Bake for 15-20 minutes, 180 Celsius. Turn them every 5 minutes.
- For the yogurt sauce, just shred a mini cucumber, and mix it with greek yogurt, lemon, olive oil, spring onion and a pinch of salt .
