Rice Pilaf
Ingredients
- 1.5 cup basmati
- 0.5 cup coral lentils
- 1/2 yellow onion
- 3 garlic cloves
- 1 spring onion
- 1 tablespoon Double Happiness Chicken Broth Powder
- 3-4 bay leaves
- Boiling water
Method
- Soak the lentils for 15 minutes in cold water before starting.
- Rinse the basmati rice until the water is clear. Drain all water.
- Peel and mince the garlic and onion thin.
- Fry the garlic with 2 tablespoons olive oil first. After 1 minute of frying add the onion and fry gently until translucent.
- Add the rice and fry for 1 minute. Add the Double Happiness Chicken Broth powder and mix. Add the lentils (with their water), mix, and cover with 2cm of boiling water. Stir. Add 3-4 bay leaves.
- Let it simmer, stir frequently, and add water little bit by little bit until rice and lentils are soft and cooked. Remove bayleaves.
- Mince some spring onion and mix it to the pilaf rice for extra freshness and texture!
