Thermomix Purple Carrot Mini Cup Cake
Ingredients
- 4 Eggs
- 25 grams of Castor Sugar (optional)
- 50 grams of Whipping Cream
- 30 grams of Coconut Oil
- 50 grams of Double Happiness Pancake Purple Carrot
Method
- Preheat Oven at 160 C.
- Add eggs & sugar to beat. ( 1 min / Speed 10)
- Insert butterfly whisk to beat. (30 mins / 45 C / Speed 4)
- Scrape down side of bowl and beat further 5 mins / Speed 4)
- Add Whipping Cream, Oil and flour to fold in. (10 Sec / Speed 3)
- With aid of spatula, mix in one direction to ensure everything is well combined.
- Remove butterfly and pour batter into cup and bake at preheated oven of 160 C for 30 to 45 mins.
